Honey Chia Pudding

This honey chia pudding is a great and healthy way to start your morning. Chia seeds are loaded with fibre, protein, omega-3 fatty acids and antioxidants, and a clover or canola honey adds a touch of sweetness with the added benefit of additional vitamins and micronutrients that white sugar doesn’t provide. Use a variety of fruits for this dish, don’t limit yourself to just berries. Pears, bananas, or apples also pair excellently.

Yields1 Serving
 2 tbsp raw Alberta honey
 2 cups coconut milk
 6 tbsp chia seeds
 ½ tsp vanilla extract
 Fresh Berries
 Granola (optional)

Combine the coconut milk, chia seeds, vanilla and honey in a medium bowl.

Mix well until the honey has dissolved.

Cover and refrigerate for at least 4 hours, but preferable overnight.

Stir well and divide the pudding into individual portions.

Serve with fresh berries. Add granola, if desired.
