Honey Lemon and Ricotta pizza

AuthorJules

Cheese and honey are a combination of two foods not often mentioned in the same breath, but there is an undeniably great marriage between the two when paired properly. Soft cheeses like ricotta provide a vegetarian-friendly protein while the honey sweetens the deal with antioxidants and good gut enzymes. You can feel good about making this dish.

Yields1 Serving
½ lb pizza dough, homemade or pre-prepared
 1 lemon
 1 cup ricotta cheese
 ¼ cup pine nuts
 1 tbsp olive oil
 2 tbsp raw Alberta honey
Salt and lots of black pepper
Prepare the toppings and dough
1

Preheat the oven to 450 °F with a pizza stone or baking sheet in the oven.

2

On a well-floured surface, stretch and roll the pizza dough to ¼ inch thick disc around 12 inches in diameter.

3

Thinly slice the lemon into ½ inch thick pieces.

4

In a small pan over medium heat, toast the pine nuts until they are nicely browned, 4-5 minutes.

Assemble your pizza
5

Start with a drizzle of olive oil over the dough. Spread ricotta cheese evenly over the dough, and season with salt and generous black pepper. Layer thin slices of lemon over the ricotta cheese. Do not add the honey yet as to not burn the sugars while cooking.

6

Using a pizza peel or the back of a cookie sheet, transfer your assembled pizza to the preheated baking surface. Bake for 5 minutes, then check and spin the pizza. Drizzle the honey on top.

7

Cook for another 5-10 minutes or longer if necessary, until the crust is browned, and cheese is bubbly.

8

Top with toasted pine nuts immediately and serve.
